Tilapia

This recipe is tasty and low-fat. You can omit the sugar and substitute sake for mirin if you're worried about carbs.

3 tbsp soy sauce
3 tbsp mirin
1 1/2 tbsp vinegar
1 tbsp sugar
1/4 cup slivered ginger
4 scallions sliced lengthwise into thin curling strips
9-12 oz. tilapia (probably two sides of fish)

Sauce: mix the first 4 ingredients (from soy sauce through sugar) in a small cup.

Heat a coverable pan on medium-high heat. Add the tilapia, half the sauce, half the ginger, and half the scallions. Cook until cooked through on one side (3 minutes). Flip the tilapia and add the remaining sauce, ginger, and scallions. Cook till cooked through on the other side (2-3 minutes).

Serve with white or brown rice.

Serves 2.
